Achievement: Transfer of the enzyme in production with a good activity and recovery

with Air Liquid
Title: Improvement of yeast baker fermentation by adding pure oxygen with the same physical and chemical characteristics.
Activities: - Fermentation (production of yeast)
- Transfert of oxygen
- Report of mass balance transfer
- Fluidized bed dryer and press filter
- Analyze of yeast chemical characteristic
- Result presentation to the management team in English (RαD, production and Air
liquid)
Achievement: The project was a total success, the fermentation yield increase until 20% with the
same physical, chemical and quality characteristics.
