    Suivi des vins : dégustation, analyses (FOSS et autres) - Participation aux assemblages : MDD et marque propre : dégustation, préparation échantillons - Suivi des travaux de cave : relogement, assemblages, stabilisations tartriques (stabulation, CMC, Electrodialyse…) et protéique (collage) des vins, filtration (tangentielle) - Suivi des mises : rédaction des feuilles, dégustation avant mise et après (échantillothèque des bouteilles et BIB), oxygène
    Au LABORATOIRE :
    Analyses FOSS- Analyses microbiologiques (avant et après mise, Brettanomyces) - Analyses stabilité des vins (DIT et ISTC, test frigo, test protéique, turbidité) - Suivi des oxygènes dissous (mise et BIB)
    A LA VIGNE : avec le service vigne de la cave :
    Suivi parcelle de référence (stade phénologique, pression maladies et ravageurs), participation aux réunions avec les viticulteurs - Vision globale sur conduite du vignoble et des coopérateurs
