En résumé

I am Professor at the Ecole hôtelière de Lausanne, and in charge of the Food & Beverage Industry Chair sponsored by Nestlé Professionel, Danone Professsionnel and UniLever Food Solution. My research interests are on strategic management of hotel and restaurant SME, hospitality entrepreneurship as well as job prospective in the food service industry.
I am active as referee for AIREPME (an international association focused on research in entrepreneurship and SME), Gastrosuisse (the Swiss national professional association in the restaurant business) and the pedagogical organization of a University of Applied Sciences in Madagascar.
I hold a PhD from University Basse Normandie (France) and has more than 20 years experience in the creation, implementation and management of new concepts in the hospitality industry. I have also large consulting experience in hospitality and restaurant management for many companies in Switzerland, Côte d’Ivoire, Turkey and Ukraine.
