    2015 - 2015 Extraction of olive waste polyphenols and antioxidant activity

    The project of pre-processing and stabilisation of olive pomace for value added food ingredients was a partnership with a research project in Breakthrough processing “Waste to food conversion”. The main objective for this subject was to extract the micronutrients naturally present which are polyphenols for the olive pomace, and to develop functional food ingredients.

    During these 4 months, different processing temperature-time combinations have been trialled for stabilisation of polyphenols content in olive pomace. We also tried to measure the antioxidant capacity to see if several treatments can affect the extraction of polyphenols but also their role as antioxidant.

    Different relations have been demonstrated, In a first part we can see a correlation between total polyphenols extracted and several heat treatment applied, and a second correlation was shown between the polyphenols content in olive pomace and their antioxidant capacity with and without heat treatment.

    In this project, the stability of polyphenols during storage in industry has to be considered because this bioactive compounds are highly bioavailable in humans.Their addition in food as an ingredient can be exert beneficial effects on health like the consumption of olive oil. So drying olive pomace was a second part of the subject. The main objective was to show if, with a heat treatment before freeze-drying sample, it was possible to stabilise polyphenols in olive pomace and their antioxidant capacity during the storage as an ingredient.
